easy pasta salad

this pasta salad is a
summertime favorite at our house.

start with:
rainbow spiral pasta
my homemade vinaigrette
vinaigrette recipe:
2 cups canola oil
1 cup balsamic vinegar
1 cup soy sauce (i use low-sodium tamari)
minced garlic (about 4 cloves)
dry mustard (about 1 Tablespoon)
salt & pepper (about 1/2 teaspoon each)


then add:
cherry tomatoes
black olives
mozzarella cheese
thinly sliced red onion

other ideas:
chick peas
capers
sundried tomatoes
artichoke hearts
feta cheese
salami
spinach
chopped leftover pizza
~ ~ ~ ~ ~ ~
yum!

  1. I make this all the time but never thought of adding left over pizza. How delish that sounds. We make a Middle Eastern salad with bread called Fatoush...this would be much like it. I can't wait to try...now I need to order a pizza and tell them not to eat it all! :)

    i always use canola oil because it has a neutral taste. my olive oil is REALLY fruity.
    if you try it with olive oil, please let me know how you like it.

  7. it turned out great substituting the olive oil for canola! really couldn't tell a difference in taste, the olive oil dressing is a tad thicker.

  8. hi catie! i am in the process of making your yummy dressing - after i had a moment of *panic* because i couldn't remember where i found the recipe last time - searched the ning site and then remembered it was on your blog...so i've just had a lovely stroll through your past couple months looking for the title that would remind me where the recipe was :)

    anyhoo, would you ever consider putting your yummy recipes in one spot? you make such yummy stuff - like i had totally forgotten about the fried sage leaves. but, if i could come to one spot to find your recipes i would be a happy chef ;)

    i know it's more work for you, but just a thought that would be helpful for your lovingly devoted followers ♥ xoxo

    i love your idea of a spot for recipes.
    there are lots of widgets & gadgets that i can add... maybe something like that would work as a list of links?
    also, for next time, there is a google search engine that searches just my blog. maybe i'll see if i can scoot it up under my followers...
