  1. this looks delicious...I was just thinking this morning, I should have gotten my act together and made black eyed peas for dinner, I love the idea of it on New Year's...do you always make it???

    make it tomorrow night, maybe.

    we love black-eyed peas & collard greens, so i usually make it for new years {and other times}.

    winco has black eyed peas in bulk.
    i sauteed a sweet vidalia onion/garlic/celery/carrot.
    i used "better than bouillon" and 2 bunches of chopped collard greens.
    also made buttermilk cornbread.

    how much better than bullion do I use?? last time i used WAY too much and it was not good..and how much water? or do you use stock??

  4. i'm so bad about measuring...
    i sauteed the veggies,
    then added the black-eyed peas,
    then added boiling water,
    then added the bouillon paste.
    yes, you do have to be careful not to add too much. i think roughly one teaspoon to 8 oz of water, but no more. add a little & then taste the broth. ♥

  6. I love this dish but we can no longer eat this in my sodium free home. :( I must tell you that in the south we cook all of this on a ham bone and use no buillon.

  7. This looks good, Catie! I made mine yesterday on the ham bone left from the Christmas ham that someone gave us for a gift...a 28lb. spiral sliced Smithfield ham! It was delish and made such delicious collards and blackeyed peas. May this bring us all a year full of good luck! xooxxo Gretchen
