:: breakfast of champions ::

eagle hills elementary teaches and celebrates
positive character traits, like honesty and sharing.
ned was recognized today
at the breakfast of champions for showing
empathy
don't you love all the teacher high-fives?

this is ned with his wonderful teacher,
mrs. morgan.
{we absolutely adore her}

in other ned news,
the surgery center called to say
that his surgery {tonsils & adenoids}
has been moved up to next wednesday.
he is pumped {for popsicles & ice cream}.
i am nervous {because it's surgery}.
please keep my sweet boy in your
thoughts & prayers.

sick of sickness

ned's appointment with the
ear, nose, & throat specialist yesterday
determined that his tonsils & adenoids need to go.
pronto.
he might need ear tubes, as well.

so, that's what we'll be doing in three weeks.
for spring break.
awesome.

in the meantime,
his antibiotics are making him ill.
it's not fun or pleasant and he can't go to school.

we are in that exhausting pattern
where we solve one problem
just as a new one arises.
it's called whack-a-mole.
i'm realizing that there is no such thing
as a "normal week" anymore.
whack-a-mole is the new normal.

i wish there was a prize at the end.

but on the bright side,
i have a brand new baby orchid.
the little teapot is from my sweet pal, mary ann,
and it used to be in a kindergarten classroom.

today has been the most relaxing day.
i really needed it.

this little guy has been sick.
so he and i stayed home and took it easy.
{we will see the ear, nose, & throat specialist tomorrow}

these guys skied bogus basin today.
{our local mountain ~ just a 45 minute drive}
never mind that the big guy was diagnosed
with pneumonia less than one week ago.

{in the blue dress and crazy platform sandals}
thinks that now she is 18,
every weekend is a road trip.

:: weekend biscuits ::

marian made these biscuits
last weekend using a recipe from
her consumer sciences {home ec} class.
they were quick & easy & really delicious.

we have eaten them in mostly breakfast-y ways,
but they would be great with soup.
i mean, really, can you imagine anything
that wouldn't be better with a biscuit?

cloud biscuits
preheat oven to 450°

2 cups flour
1 Tblsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 cup butter
1 beaten egg
2/3 cup milk

notes:
we used half whole wheat & half unbleached white flour.
recipe called for shortening, but we swapped it for butter.
we doubled this recipe.

1. sift dry ingredients
2. cut in butter {until mixture resembles coarse crumbs}
3. combine egg & milk, then add
4. stir until dough forms a ball
5. turn out onto floured surface
6. knead 20 strokes
7. roll out 3/4 inch thick {or thicker}
8. cut with biscuit cutter {or cut into squares}
9. bake for about 10 minutes, until golden brown
cutting them into squares is easier & uses all the dough.

we froze the extras for quick weekday breakfasts.
{microwave for 10 seconds, then split & toast}
