:: black bean burgers ::


one of our very favorites

black bean burgers {makes 6 big burgers}
ingredients:
1 onion, diced
1/2 red bell pepper, diced
1 zucchini, grated

1 can black beans {15 oz}
--------------------------------
1 T cornstarch
2 T water
--------------------------------
1 cup potato flakes {or one 4oz package "idahoan" roasted garlic mashed potatoes}
1/4 cup oats
1/4 cup whole wheat flour
1/4 cup nutritional yeast flakes*
1/4 cup dry milk powder
2 eggs, lightly beaten
salt & pepper to taste
*plus extra nutritional yeast to "bread" burgers

you will also need:
oil for the pan {i use butter & olive oil}
6 rolls or hamburger buns
toppings:
sliced cheese
lettuce / cabbage / tomatoes / pickles / onion
mayo / ketchup / mustard

directions:
saute diced onion, diced red pepper, grated zucchini.
season with salt & pepper as you saute, then allow to cool.
rinse beans, then mash.
combine cornstarch & water, then add to mashed beans.
add remaining ingredients: 
potato flakes, oats, flour, nutritional yeast, milk powder, eggs, s&p.
shape into 6 patties.
coat in nutritional yeast flakes {like a breading}.
heat oil in a heavy pan or griddle.
cook 5-10 minutes per side {until golden brown}.
top with cheese while hot.
toast buns under broiler.

best served outside with:
corn on the cob, watermelon, pasta salad, potato chips

Black bean burgers have always been a favorite around here too.
