two delicious & easy summer recipes to make:
quinoa tomato salad with edamame
cook quinoa:
1 cup quinoa + 1 cup french onion soup & 1 cup water
bring to a boil, cover & simmer for 15 minutes.
remove from heat & allow to rest & continue to steam.

remove from heat & allow to rest & continue to steam.
add chopped tomatoes & cooked edamame.
salt & pepper to taste.
{chopped avocado would be great, also}
zucchini fritters

we received HUGE zucchinis in our
csa share yesterday - perfect for this.
i might try to make 8 fritters next time, instead of 6.
they'll be that much crispier & yummier.

these both look great! i love quinoa..and i just found red quinoa in my pantry, so i will try this...i love the idea of the onion soup packet for flavor!
dawn, i always use prepared french onion soup - comes packaged like soymilk {pacific brand}. a packet would work, too, just be sure you use the 1 cup quinoa to 2 cups liquid ♥
oh yes!! didn't even think of that... i know exactly which soup..i love their tomato and roasted red pepper!!
headed to our local farm market for zucchini's and tomatoes! looks delish! perfect to pack for the beach!! xo
