'the works' sauce {it's vegan!}

we're going vegan.

and this is my new vegan sauce.

i'm calling it 'the works'
after emily's favorite vegan wrap
at her local grocery in santa cruz.
emily has been vegan for almost a year,
so this recipe is dedicated to her.

'the works' sauce
makes 2 cups

combine all ingredients and blend until smooth:

1 cup cooked beans {save broth}
{cannellini beans, chickpeas, soybeans}
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup tahini
1/8 cup tamari
1/8 cup apple cider vinegar
1 - 2 cloves garlic
1 tsp spike {seasoning blend}

note:
you can adjust the thickness of the sauce
by how much bean broth [bean juice?] you add.

this sauce is delicious on rice & beans.
make it 'the works' by adding
fresh spinach, purple cabbage, avocado,
salsa & cilantro.
serve in a bowl or in a tortilla.
yum!

it also makes a great creamy salad dressing.

tip:
to make this sauce regularly,
cook batches of chickpeas & soybeans,
combine them & freeze in 1 cup containers.

We watched this a few years ago and tried....but just missed eggs and such. I could go veggie (we both could) Cameron is totally vegan now, and I got him a great cookbook for Christmas. I think Lynn and I should try again!! xx

You know I all over this!
I eat vegan 85% of the time and allow myself some cheese and eggs the other 15%. I love my diet!

Thank you the inspiration and for the recipe, Catie!
Yesterday I finally stopped at bio orchard I passed over every day returning from work home and bought some biologic vegetables. I'm happy I do little steps forward healthier food every day.
My word is "simplify" and "use what you have" recently. I just want to live a simplier and happier life...
And I know I have it all close, just have to pick it up.

Rita stopped consuming cow milk, even she still eats some cheese and eggs and fish.
I stopped adding sugar into my coffe I prepare mostly with oat milk too and we experiment with vegan sugar free sweets and cakes recipes.
We drink more water.

Well, and thank you for "gourd" word, I didn't know it before! :)
