camping trip

turns out,
camping with 22 teenagers is
so. much. fun.

if these student council kids
maintain their government roles,
we are in good {and hilarious} hands.

big thanks to melissa stephenson,
the new student council advisor,
for making this trip happen!

after we got home, marian said,
"having you there
wasn't as bad as i thought it would be."
love you too, honey.

blueberry lemon skillet cake

original recipe is here.
below is my adapted version.

2 2/3 cups whole wheat pastry flour
1 Tablespoon baking powder
1 teaspoon salt
1/2 cup of sugar
zest and juice from 1 lemon {or 2}
2 teaspoons of vanilla
2 eggs
1 cup + 2 Tablespoons buttermilk
3/4 cup coconut oil
2 cups berries

put cast iron skillet in oven.  preheat oven to 400°

in large bowl combine:
flour, baking powder, sugar, salt, lemon zest.

in smaller bowl combine:
eggs, vanilla, buttermilk, lemon juice.

remove cast iron from oven.
melt coconut oil in hot skillet, swirl to coat.

pour wet ingredients (including melted coconut oil)
into dry ingredients and gently fold.
when almost combined, fold in berries.

pour batter into skillet and place in oven.
bake for 30-40 minutes
or until knife inserted in middle comes out clean.
remove from oven and cool on wire rack for 5-10 minutes.

happy birthday, mom! {a few days late}

my mom's birthday was wednesday the 16th
and, no i didn't forget...

i've been searching everywhere
for this picture of her
{just found it!}
which i used to make this
a long, long time ago.
{when i was in college}

i love you so much, mom.

flashing back

i'm feeling a little spooked.
in a good way.
i was searching for a video of sugar magnolia
to go along with ned's tie-dye for yesterday's post,
and i found these 3 shows that i saw long ago
at alpine valley in east troy, wisconsin.
it was amazing enough to find all three shows,
and then i looked at the date...

25 years ago today
{look for me in the crowd}
note: this video switches at 35:00 to the show on the 19th,
then switches back.

25 years ago tomorrow

25 years ago saturday

p.s. i just have to mention,
part of what makes this so mind-blowing,
is that when i made my way down
to section 1, row RR,
there was someone sitting in seat 121.
in 5 years, he would be emily's dad.

broccoli with cashews

i saved this recipe from simply organic,
a cookbook i checked out from the library years ago.

goes great with black bean burgers
& good barbecue potato chips.

broccoli with cashews
1 large bunch broccoli
1/3 cup mayonnaise
3 Tablespoons red wine vinegar
2 Tablespoons brown sugar
1/2 medium red onion, very thinly sliced
1/2 cup cashews
1/4 cup raisins
salt & pepper

cut broccoli into florets.
blanch in boiling water 3 - 5 minutes.
then plunge into ice water to stop cooking.
mix mayo, vinegar, sugar, onion.
add broccoli , cashews, raisins.
mix well & season with salt & pepper.

i didn't measure & it still turned out great.
also, i didn't have red wine vinegar,
so i used balsamic & apple cider vinegars.

veedon fleece

another favorite van morrison album: this one

if you only listen to one song,
make it the last one.
takes me right back here

we stood and watched the river flow
we were too young to really know

we laid out in the long green grass
and never thought that it would pass

we counted pebbles in the sand
sand like time slippin' through our hand

in sweet summertime

do you know this album?
wow, it takes me back.
i always think of it on this very day,
when it's almost independence day.

pour yourself a drink,
sit outside,
and listen to the whole album.

side one

side two

happy almost independence day.
