i'm a fan of recipes that are:
1. crazy easy, and 2. crazy good.
this fulfills both requirements.
:: rhubarb ginger simple syrup ::
{it's a special sneak peek at the beginnings of an earthly delights cookbook}
take a moment to admire its pale pink color.

mix this delicious syrup with bubbly water
for a kid-friendly rhubarb-ginger ale.
mix it with gin or vodka and soda
for grown-ups.
we haven't tried it on vanilla ice cream yet,
although that is highly recommended.
here's how to make it:
1½ cups sugar
1 cup water
2 cups sliced rhubarb
1 cup chopped ginger
simmer water & sugar until dissolved.
add rhubarb & ginger and simmer until soft.
remove from heat & allow to cool.
strain and store in a canning jar in the fridge.
it is oh, so ginger-y.

YUM!!! I love rhubarb and just happen to be at my mom's house who has some growing in the backyard!
I bought a ginger about one month ago and didn't know what to do with it :) I'll try your receipe if I find rhubarb :)
