from earthly delights farm,
you might remember green bean tacos
they are worth mentioning again.
we have been making these weekly
with green beans from our csa share.
-:- cumin -:-
is the magic ingredient
in green bean tacos.
along with onions & garlic,
we're also adding
tomatillos, zucchini, & peppers
from our farm share.
green bean tacos
green beans
oil {i use butter & olive oil}
onion, shallot, garlic {chopped}
tomatillos {quartered}
zucchini {chopped}
peppers {chopped}
cumin {it's all about the cumin - add lots}
salt & pepper
corn tortillas
jack cheese, salsa, sour cream, avocado
lime
directions:
1. cook green beans until tender
{you can steam them or simmer them}
2. saute onion/shallot/garlic in oil
3. add tomatillos/zucchini/peppers
4. add cumin {lots}, salt, pepper
5. add cooked green beans
6. add a little more cumin : )
7. warm tortillas
8. fill tortillas with green bean/cumin mixture
9. top with cheese, salsa, sour cream, avocado
10. squeeze a little lime over the top
11. e-n-j-o-y
12. repeat steps 8, 9, 10, & 11 as needed.

I love everything about corn tortillas - I always got them in kitchen drawer to prepare a different breakfast :)
And your receipe sounds delicious! :)
Quick question.....what kind of peppers do you like in these? Red, green, or a hot pepper?
emily ~ use whatever you like. i've just been using the peppers that come in our weekly share: usually mild peppers {anaheim or antohi} + one jalapeño. the peppers are where you can customize the heat, so go with what you know & love.
