today was cold.
this soup was the perfect thing.
from this book
4 Tbls butter
3 chopped leeks
salt & pepper
9 - 10 chopped yukon gold potatoes
6 cups water
puree with a stick blender, then add
1 cup milk & 1 cup shredded cheddar
so, so good.
