let me tell you, those kids LOVE art.

i introduced ned's class to

we learned about abstract art, 

and how it is different from realistic art.

we looked at this

{around the fish}

and this

{blick der stille ~ translation: gaze of silence}

{theater mountain construction}

we talked about color,

and how paul klee used line and color

to draw our attention to certain things

and to move our eyes around his paintings.

we reviewed the primary colors,

and how to mix them to create secondary colors.

then, 

we made these

:: vegan coconut curry ::

i made a vegan coconut curry

this week that was really delicious.

here's my recipe:

about an hour before you begin,

make a pot of brown basmati rice.

{brown rice = better rice}

1. saute aromatics in olive oil

onion, celery, carrot, garlic {plus salt & pepper}

2. add curry powder & grated ginger

get ready for everyone to ask,
"mmmmm... what are you cooking?"

3. add cubed tofu

4. add coconut milk

5. add a little brown sugar

& a pinch of crushed red pepper

6. add all extra veggies

yellow bell pepper, mushrooms, water chestnuts

potatoes {pre-cooked}, cauliflower, tomatoes

7. simmer

{just before serving, stir in thin strips of fresh basil}

while this simmers, make a big pan of

sauteed bok choi with snow peas.

serve the curry over the rice,

with a side of greens.

top everything with chopped green onions.

the only bummer is the timing.

this started at 7 this morning,

so it was too late for the schools

to call a snow day.

by 9:00, we had about 4 inches.

and it's still snowing.

big, fat flakes.

this one arrived yesterday morning
& i knew i wanted to try it immediately.

the new vegetarian epicure
{1996, so not that new}
side note:
long ago, i cooked from the vegetarian epicure, books 1 & 2

i started preparing this in the early afternoon,
{roasting the squash, caramelizing the onions}
making our house smell wonderful,
and we ate it last night.
it was outrageously good.

smoky & warm & earthy

polenta

with butternut squash & cheese

: smoked gouda, parmesan, & pine nuts :

i cut the time & fuss in half by skipping the
refrigerate for 3 hours & bake for 1 hour,

opting to eat it straight from the pot,

topped with wild mushrooms & more parmesan.

i have renamed it woodland porridge.

the smoked gouda reminded me of bacon.

{in a good way}

it's the meatiest thing

this vegetarian girl has eaten

in quite some time.
