easy vegetarian dinner


cauliflower + quinoa + salad
last night's dinner was simple and perfect.

this cauliflower is amazing.
the incredibly easy recipe is here.
{just 4 ingredients}

i made the quinoa adding
french onion soup to the cooking water.
basic recipe:
1 cup quinoa + 2 cups liquid
{1 cup soup & 1 cup water}
bring to a boil, cover & simmer for 15 minutes.
remove from heat.
allow to rest & continue to steam.

the salad was organic spinach & baby greens
with chick peas, avocado,
red onion, celery, and tomato.
