family favorite :: jan's mac & cheese

is my dear friend
is an incredible mother
was my midwife
{she witnessed the births of my 3 babies}
is "fairy godmother" to my kids
lives in the woods
is extremely funny
carries flares in her car
gives sage advice
reads my blog
{hi, jan!}
she also makes a mean mac & cheese.

jan's mac & cheese
1 lb of pasta
{cooked al dente}
2 eggs
8 oz (1 cup) plain yogurt
8 oz (1 cup) cottage cheese
lots of grated cheddar cheese
salt & pepper to taste

directions:
cook pasta following package directions.
drain & cool.

preheat oven to 350°
butter a large, covered casserole dish.

in a large bowl, combine cooked pasta with
 eggs, yogurt, cottage cheese, salt & pepper.

stir to combine well,
then add grated cheddar.

pour into buttered casserole dish.

bake covered for 30 - 40 minutes.

serve with lots of steamed, buttery broccoli.

variation:
i like to add several cheeses.
tonight, our mac & cheese had
fresh mozzarella, ricotta, and jack cheese
in addition to the cheddar.

this mac & cheese is quite good with
sriracha hot sauce on top.
