chopped salad


this one-dish dinner
is always better than the sum of its parts.
this chopped salad included:
one leftover ear of corn {cut off the cob}
1/2 leftover tomato {from an earlier sandwich}
a few mushrooms
green cabbage
a tiny onion
carrot & celery
fennel
a giant beet {cooked & sliced}
lots of steamed broccoli
lots of avocado
romaine, spinach, baby greens
some shaved parmesan cheese

Sounds delish! I would add chopped walnuts because I add those to all my salads! :)
