i have just come up with the
best. scone. ever.
our favorite up until now
has been coconut pecan.
{my recipe is here}
today, we were out of pecans.
please note:
being "out of" a critical ingredient
is usually a signal that
something delicious is about to happen.
we had cranberries.
we had oranges.
we had chopped roasted almonds.
{the kind i put on top of ice cream sundaes}
and we had a handful of chocolate chips.
embracing the spirit of change,
i even modified their shape
from the usual wedge to a rounded square.

almond chocolate scone
here is the recipe with my new changes:
cranberry orange almond chocolate scones
ingredients:
3 cups flour
1/2 cup sugar
1 Tblsp baking powder
1/2 tsp salt
1/2 cup unsalted butter (one cold stick)
1 cup dried cranberries
1 cup chopped roasted almonds
1/2 cup chocolate chips
zest of 1 orange
juice of same orange {juice after zesting}
half & half {combine with the juice to make 1 1/4 cup}
{extra half & half and sugar for tops}
directions:
preheat oven to 450°
combine first 4 ingredients.
cut in cold butter (i chop into tiny cubes first).
add cranberries, almonds, chocolate chips, orange zest.
stir in orange juice/half & half mixture, mix to combine.
turn dough out onto a floured surface.
gently press into a square (about 10").
cut into smaller squares (i made 16).
arrange squares on baking sheet lined with parchment so they are not touching.
brush the tops with extra half & half,
then sprinkle with extra sugar.
bake 15 minutes or until golden brown.

are you kidding me???? these are all of my most favorite flavors...guess what I am making tomorrow!!! I have made cranberry orange, but choc chips and almonds....mmmmm

putting choc chips, almonds, and cranberries on my shopping list for today...yum!!
OMG...these are the best scones ever...except, none of my kids will eat canberries, so even though they had choc chips, which they love, they wouldn't eat them...so guess who has eaten most of them :)...next time I will pull out a little dough and add the cranberries just for myself...so good Catie!!
