we are officially back to school,
and that means official dinnertime.
i started this week with a meal plan.
each person got to choose one dinner.
also, i have decided that we'll have
soup every friday night.
here's how our week of dinners looked:
{only four since school started tuesday}
tuesday: big salad
spinach, romaine, arugula, poached eggs, beets, broccoli, onion,
peas, cheese, avocado, celery, cucumber, and this dressing.
wednesday: yum bowl
a base of mixed salad greens,
beans, rice, cheese, super sauce, salsa, avocado
{plus leftover beets & broccoli from the previous night}
thursday: panini
french baguette, fresh mozzerella, heirloom tomatoes,
basil, olive oil, salt, pepper.
friday: tomato soup
roasted:
tomatoes, leeks, garlic, olive oil, salt, pepper
simmered in the pot with:
bean broth and a little "better than bouillon"
then blended with my immersion blender
tomatoes, leeks, garlic before roasting
tomatoes, leeks, garlic after roasting
a dinner plan makes me happy.
